iceberg lettuce
baby spinach
ruccola
cherry tomatoes - red and yellow
parmesan
olive oil
1 tablespoon balsamic vinegar
1/2 tsp mustard
1 tablespoon honey
salt, pepper

Wash and dry well all green vegetables - iceberg lettuce, ruccola and baby spinach. Shred the salad. Arrange in a serving bowl.

Cut the cherry tomatoes in halves and add them too.

Grate the parmesan with a knife on top. Season with salt and pepper to taste; add the olive oil.

Separately, mix the balsamic vinegar, mustard and honey and pour over salad. Stir and drink immediately.
