iceberg lettuce
baby spinach
ruccola
cherry tomatoes - red and yellow
parmesan
olive oil
1 tablespoon balsamic vinegar
1/2 tsp mustard
1 tablespoon honey
salt, pepper

Here is one quick salad with cherry tomatoes, and baby spinach – it is pretty fresh and extremely healthy.

Wash and dry all green vegetables (iceberg lettuce, ruccola and baby spinach) well. Cut or tear the salad. Arrange in a serving bowl.

Cut the cherry tomatoes in halves and add them to the bowl.

Grate parmesan cheese on top. Season with salt and pepper to taste; add olive oil.

Separately, mix balsamic vinegar, mustard and honey well together and pour over the salad. Stir and serve immediately.
